A simple supper which can be served on sets of wooden boards, to really give that ‘grill’ feeling. A good ridged griddle pan is essential to get the lovely charred markings. Topped with herb butter, these are mouthwateringly delicious!
Preparation Time: 15 minutes
Cook Time: 6-8 minutes for medium rare
o 2 x 200g/7oz rump or rib eye steaks
o 2tbsp steak seasoning
o 2tbsp groundnut oil
o For the herb butter
o 115g/4oz salted butter
o 1tbsp fresh rosemary, finely chopped
o 1tbsp fresh thyme, finely chopped
o 1tbsp fresh parsley, finely chopped
o 1 garlic clove, crushed
o Large pinch of steak seasoning, or Cajun spice if you prefer (experiment!)
Mix together the butter, crush garlic and chopped herbs with the steak seasoning.
Using plastic wrap, roll into a log, twist the ends of the wrap and place in the fridge to firm up again.
Season your steak with the steak seasoning, and a little salt and pepper if required.
Place your ridged griddle pan over a high heat, pour in the groundnut oil and brush around the pan.
Wait until the pan is almost smoking hot, and place each steak in the pan, being careful not to be too close in case the hot oil spits.
Cook for 3-4 minutes on each side until the steak is cooked to your liking.
Top with slices of the herbed butter and serve with fries or salad.
